The Fontanafredda estate was owned for long time by the italian kings, handed by their descendants: the Counts of Mirafiori and Fontanafredda.
This winery produce wines since 1870 using only selected indigenous yeasts and traditional methods: a medium-long fermentation in steel vats with a floating cap at a controlled temperature (30-31° C). Then the must stays in contact with the skins for further 15 days to optimize the extraction of the polyphenolic substances and help start the subsequent malolactic fermentation.
The ageing takes one year in barriques from Allier and two year in oak casks still from Allier. After a soft clarification, the wine is bottled for a further period of maturation in the bottle for never less than 12 months.
